"Graceland Oatmeal Meatloaf" from Holy Land Diner, Springfield, IL
| Ingredients | | | 2 | each | green peppers, diced | | | 2 | md | onions, diced | | | 2 | lg | eggs, lightly beaten | | | 2 | pound | chuck, ground | | | 1 | pound | bulk sausage meat | | | 1/2 | teaspoon | salt | | | 1/2 | teaspoon | black pepper | | | 1/2 | teaspoon | garlic powder | | | 1/4 | teaspoon | onion powder | | | 1 | cup | rolled oats | | | 1 1/2 | cup | ketchup | | | | | |
Directions:
| Preheat the oven to 375. Combine all the ingredients except 1/2 cup of the ketchup in a large mixing bowl. Mix well and shape into a nice, even loaf. Place the loaf in a shallow baking dish and top with the remaining ketchup.
Bake for 90 minutes or until well done.

DESCRIPTION: This place is great. Whenever I visit from Seattle, this is a restaurant that I always look forward to eating at. It's a family run place with a great lunch buffet. It is great to find a restaurant in Springfield that serves beyond the regular american cuisine.

Great Vegetarian Buffet
DESCRIPTION: Holy Land features an all-vegetarian buffet every Saturday night. Among other things, it includes lentil soup, greek salad, falafal, pitas, cucumber sauce, hummus, baklava, feta, and lots of other yummies. I've not experienced a lot of Greek food, but this is mighty delicious, and cheap!
