"Salmon Manicotti" from Max's Restaurant, Brattleboro, VT
15 1/2 ounces salmon, pink 12 manicotti noodles cooked 10 ounces frozen chopped broccoli cooked, drained 1/2 pound cottage cheese, 1/2% fat or ricotta 1 egg slightly beaten 1/4 cup grated Parmesan cheese SAUCE 2 1/2 tablespoons flour 1 teaspoon dill crumbled 1/2 teaspoon salt 2 cups skim milk 2 tablespoons lemon juice For sauce, blend flour and milk till smooth, add seasonings and cook, stirring constantly, till it thickens. Remove from heat and stir in lemon juice. Drain salmon and mash. Combine cheese and egg. Stir in salmon and broccoli. Fill manicotti with mixture. Cover the bottom of a shallow baking dish with a small amount of sauce, Arrange the manicotti over it. Top with remaining sauce and sprinkle with Parmesan cheese. Bake 30 35 minutes at 350F. Warm, Inviting Atmosphere
DESCRIPTION: With the candles, and generally no noisy children, this is a great place. Food is very good too. Be sure to order the thin-crust pizza. Fresh salads complete the meal.

DESCRIPTION: We stop in every Friday night for our usual fare of calzones (made to order) and big salad (made to order). Once in a while they put the wrong cheese on (we like cheddar), but most of the waitstaff knows us and what we like.

The most Unbelievable Food and Ambiance Around
DESCRIPTION: I used to be a regular at Peppinos when I lived in Killington, VT and through my travels within the past 10 plus years I have never been to a more desireable place in my life. The food is the best I have ever had regardless of cuisine. The people are the friendliest and I would eat there every night if I could.
