"Chocolate Oatmeal Cake" from Zuni, Lexington, KY
1 c Oatmeal * 1 1/2 c Boiling Water 1/2 c Crisco shortening 1 1/2 c Granulated white sugar 2 Eggs 1 c Sifted all purpose flour 1/2 c Powdered cocoa 1 ts Soda 1/2 ts Salt 1 ts Vanilla FROSTING 1 c Sifted powdered sugar 2 c Coconut 2 tb Butter 1/2 c Milk Pecans (chopped) Vanilla * If using minute oatmeal, chop it up in small pieces before soaking it up in hot water. Mix oatmeal and boiling water and let cool. Cream shortening with sugar and eggs, add rest of ingredients along with oatmeal mixture. Beat till smooth. Bake in 8x12 greased pan at 350 degrees for 35 minutes. Frosting: Mix powdered sugar, butter and milk and boil till thick (about 6 minutes). Be carefully it doesn't get too hot and burn on the bottom, you must continue to stir constantly. Add coconut, pecans and vanilla.

DESCRIPTION: If you're one of the waitresses' favorites, expect to get served before people who were already seated when you arrived. Those unlucky souls will get their hot meals served lukewarm, at best. The bakery items are excellent; the lunch items are . . . well, the best bakers don't make great cooks, and the best chefs don't make great bakers.

But you don't have to wait for Sunday brunch to enjoy the Wildflour, located near the Suspension Bridge, you can stop by on your way to a Red's game, or during lunch throughout the week to enjoy this unexpected jewel. The laid-back charm of the establishment makes the experience very comfortable, starting from the great personalities of the owners, to the friendly neighborhood folks who stop in here for a meeting place.
